Cavallotto_BriccoBoschisVignaSanGiuseppe_back.jpgWinery: Cavallotto
Region:
Piemonte (Piedmont)
Locale: Bricco Boschis, Italy
Appellation:
Barolo
Designation:
DOCG

Site: Various parcels inside Bricco Boschis, including the historic Punto Marcello and Colle Sud-Ovest plots. Southern-facing hillsides and hilltop

Grapes: 100% Nebbiolo

Fermentation and Aging: Fermented with indigenous yeasts, macerated with submerged cap for 20-35 days. Aged in traditional Slavonian Oak Casks for 3-3.5 years, then in bottle for 6-12 months.

Notes: Optimal structure but with already-soft tannins, and with an open, intense perfume that gives this Barolo characteristics of both power and great elegance. Complex and fragrant, can be enjoyed young but has great aging potential. Best served courses of red meat, but also grilled fish or white meats, or with hard and aged cheeses. Desserts with dark chocolate are also a good match, or it can be enjoyed by itself as a “vino da meditazione” (a wine for meditation).
