Site: Vineyards on limestone/clay soils surrounded by forest and olive groves, situated at an altitude of 350 meters above sea level with western exposure.

Grapes: 100% Trebbiano Spoletino, from massale selection of the best old Trebbiano Spoletino vines, grown according to the Guyot vine training system between maple trees. Grapes are hand-picked in the second half of October.

Fermentation and Aging: Skin contact maceration, soft pressing, static cold clarification; fermentation in large oak barrels. Rests on the lees for 6 months, then bottle-aged.

Notes: Straw-gold in color. Impactful and persistent on the nose, with strong fruit and floral notes of almond and hawthorn blossom, citrus and tropical fruit, and a slightly spicy finish. On the palate it is structured, with a full acidity typical of Trebbiano Spoletino, coalescing into a perfectly balanced, amazingly tasty wine. Serve with first course fish dishes, spaghetti carbonara, saffron risotto or with main dishes such as rich fish stews and English-style rare roast beef. Excellent with aged semi-hard cheeses, as well as prosciutto ham and culatello, terrines and carpaccio.
