'Tradition' Châteauneuf-du-Pape

In a few words: Well-structured (but not too heavy!), spicy expression of the Southern Rhône. A great example of introductory Châteauneuf-du-Pape.

Site: Stone, clay, and chalk, with lots of rolled pebbles, on 13 hectares

Grapes: 80% Grenache, 5% Syrah, 5% Cinsault, 5% Mourvèdre, 5% Vaccarèse

Fermentation and Aging: Spontaneous, temperature-controlled fermentation over 3-4 weeks in concrete vats with native yeasts. Aged 6-8 months in large barrels. Unfined & unfiltered, with sulfites added only if necessary before bottling.

Notes: Pairs well with lamb (leg or grilled) and Provençal vegetables such as tomatoes, eggplant, garlic, onions... Also with duck breast and beef tenderloin.
