Fermentation and Aging: The crushed and destemmed fruit is macerated in stainless steel vats and fermented with punch-downs, pump-overs and rack-and-returns (numerous rackings to different vats) and is macerated for a total of about 12 days. The wine is racked into stainless steel deposits, allowed to undergo ML fermentation, then is racked into 25 HL oak botti for six months, after which it is blended and bottled.
Notes: A fantastic wine for meats and cheeses, hearty rice or pasta dishes, or even grilled fish. About 13,500 bottles produced.
