Ribolla Gialla, Tocai Friulano (Friulano), Sauvignon Blanc, Pinot Grigio, Riesling

Fermentation and Aging: Seventy percent is crushed, settled, then fermented in stainless steel tanks. The remaining 30% (Riesling and Sauvignon) is cold soaked for 48 hours before being fermented in similar fashion. About 50% malolactic fermentation is permitted with 6 months of lees contact.

Notes: It’s not hard to see why Zamò Bianco is one of the most successful and sought after whites in all of Italy. It is inexpensive, expressive, and lives forever in the bottle after being opened; it’s crisp acid is a refreshing accompaniment to salads and seafood or simply to marinate the chef whilst cooking. About 13,500 bottles produced.
