Fermentation and Aging: Eighty percent is destemmed and cold soaked for 48 hours, then crushed and fermented in temperature controlled stainless steel. The remaining 20% is macerated with the skins including alcoholic fermentation, a technique more akin to red wine making than to white. It is then pressed and completes alcoholic fermentation in 25 HL botti. The assembled wine undergoes partial ML fermentation then matures on the lees for 8 months before bottling.

Notes: Zamò’s Ribolla Gialla (yellow ribolla) gives a definite textural impression, probably due to the skin contact involved in the wine’s vinification. Very complex notes of lemongrass and fennel with bracing acidity. Ribolla’s fame goes back to written documents in 1289, when even then the wine was celebrated for its quality. Now, post-phylloxera, Ribolla Gialla accounts for only about 1% of vineyard area in Friuli and neighboring Slovenia. About 16,000 bottles produced.
