Fermentation and Aging: Destemmed, then 80% of the fruit was soaked with the skins at low temperatures for 48 hours; the remainder was macerated for 5 days then pressed and racked into barriques. Both lots were aged on the lees for 10 months and underwent partial (50%) ML fermentation before assemblage and bottling.

Notes: An ancient variety, called “Istriana” only in Friuli and the neighboring Balkan states. The 2005 vintage was the first for Zamò, and the family has decided to give their Malvasia serious white-wine treatment and the wine is therefore meant to age gracefully in bottle over a period of perhaps 5-10 years. A serious food wine for hearty fish dishes and risotto, it gives impressions of sage and other savory herbs. One could also consider the wine as a “vino di meditazione”. About 4,000 bottles produced.
