Fermentation and Aging: Thirty percent of the fruit is cold soaked for 48 hours. Alcoholic fermentation is in temperature controlled stainless steel. The wine stays in contact with the gross lees for 10 months, undergoes 50% malolactic fermentation and is racked just once. The two lots are kept separate until June when the final blending and bottling takes place.

Notes: Vigne Cinquant Anni means simply Vineyards of 50 years…and indeed the grapes for this wine are minimally 50 years old, in fact the average age is 60 years. Vines of this age produce much lower yields and generally much higher quality fruit. Little or no green harvest is needed, and the wine shows real nobility that is rare for this grape. It is said that the wine almost has red-wine characteristics and texture. About 12,000 bottles produced.
