Site: Grown organically and harvested by hand, at about 300 meters altitude, in the winery’s 10 hectares of south-facing estate vineyards; soils stony calcareous, with grass and flowers growing between the rows tocompete for nutrients. Vineyards are entirely unirrigated.
Grapes: 50% Sangiovese, 50% Nero di Troia
Fermentation and Aging: Macerated for 12 days in automatic Gimar fermenters; then racked into stainless steel where it undergoes Malolactic fermentation. Aged 12 months in 1/3 new French oak barriques, then for 6 months in stainless steel. Fined for 10 days at room temperature with egg whites. Unfiltered. Then spends one year refining in bottle before release.
Notes: Named for the Italian painter Ferraù Fenzoni. Just 3500 bottles produced.
