Fermentation and Aging: Careful pruning to leave the best possible bunches of Procanico and Grechetto grapes. Loose pressing of the whole grape, then the wine is fermented for 20 days at a constant temperature of 20 degrees C in stainless steel casks until bottling.
Notes: Giovanni Dubini tackles the delicate art of adjusting the proportions of the five different grape varieties allowed in Orvieto D.O.C. Enticing aromas suggest white spring flower and peach, hazelnut and exotic fruit. It boasts ripe white peach, pear and cantaloupe flavors, accented by herbs and minerals. The creamy texture is energized by crisp acidity. Best suited to rich dishes that include sauces of meat or fish and it also goes well with spicy dishes.
