Grapes: Selected Merlot and Chardonnay - harvested in October

Fermentation and Aging: Charmot method. 
Merlot grapes are pressed gently in contact with their skins. As soon as the desired color is reached, the juice released from the skins is subjected to a partial fermentation in steel vats under controlled temperature at 18° C. The cuvee is then prepared with Chardonnay wine for the second fermentation in closed steel vats, for approximately three months.

Notes: Brilliant pink in color, with a thin and persistent prologue. good intensity on the nose, featuring small red berries alongside rose petals and fresh-baked bread. The taste is fresh, the foam is creamy with a good acidity, savory in the palate, easy and pleasant to drink, leaving a dry and persistent final aftertaste. Recommended as aperitif or to be matched with various dishes, starting from first courses, grilled vegetables, white meats or fish dishes.
