Site: Sandy, stony loam, about 50 meters above sea level. 

Grape: Montepulciano, Sangiovese, Merlot

Fermentation and Aging: Long, cool fermentation for 10-12 days in stainless steel followed by a post-fermentation maceration of 7-10 days at somewhat higher temps. Followed by refining in cement tanks for several months and finally 3 months in bottle.

Notes: Elephas takes its name from the "original" inhabitants of the winery - a nod to the fossil remains of Mammoths found while excavating the new cellar (the tusk was stolen by the Nazis during WWII, but an enormous femur remains on display at the winery). Intense ruby red color. Nose of ripe red fruits with savory herbs. Soft and pleasing texture with a fine finish. 

Pairing: A wine for all types of pasta and for everyday. Try it with cheese and salumi, roast meats, and all kinds of simple courses like gnocchi or pasta with tomatoes, but also with richer and more complex courses like rabbit and many preparations of red meat.
