Leonardo Passito

Winery: Simčič Marjan
Region:
Slovenian Collio (Brda), Friuli
Locale:
Ceglo

Site: Medana, Breg. 53 - 61 years of age. 200 - 250 metres above sea level, exposure north - west, opoka: marl, slate and sandstone

Grapes: 100% Ribolla Gialla, called Rebula in Slovenian.

Vinification: After 7 months of drying, grapes are pressed (classical hand wine press); fermentation in 130L oak barrels

Aging: 60 months in 130L oak barrels.

Notes: During drying, these late picked grapes, fully ripe and carefully selected, lose more than 90% of their weight. The sugar and acid levels rise. The naturally obtained concentrations of sugar and other components give the wine an incredible aroma and complexity. Recommended with caramel desserts, chocolate or dried fruit; with Tête de Moine cheese; or alone as a glass of wine while relaxing, maybe with a good cigar.
